What is chili crisp, anyway?

Chilies, fried till they shatter, sitting in fragrant oil with garlic, shallots and a few things the dragon won't tell us about. It's a condiment. It's a habit. It goes on everything, and we mean everything.

The tale of K & the dragon

Nobody believes this part, so we'll say it fast: K found the dragon in a Zürich attic, curled up on a box of dried chilies, sneezing. Every sneeze made the flakes hiss and the whole attic smell like the best takeaway in the world.

K did what any reasonable person would do — moved the dragon to the kitchen, put a wok under it, and started making dinner for friends. The friends kept coming back with empty jars. Then the neighbours. Then a lady at the market who now buys three at a time and refuses to say what she does with them.

So by-k is that: one dragon, one wok, small batches on weekends, sold wherever K can carry a crate. It matters to K because it started as feeding people you love — and it still is, just with slightly better logistics.
